Eggplant rolls and roasted peppers

Killing two birds with one stone is usually very easy in the kitchen, especially if you have a Thermomix. The roasted aubergine and pepper rolls is a harvest recipe, that is, we use what is left over from other preparations. Usually no one likes to eat leftovers because it becomes boring and unattractive. In addition, we always think that they are "second category" but by recycling the ingredients a new, different and much more attractive dish is created.

To prepare this recipe, we will simply have to roast some slices of aubergine and make rolls. It is served with a background of homemade tomato sauce that is unparalleled with the purchased. In my case I have used the Neapolitan sauce But don't stop using your favorite tomato recipe.

The roasted eggplant and peppers rolls is a useful recipe that will be very useful to recycle the leftovers of other preparations.

Ingredients

• 1 small eggplant
• 6 roasted green pepper strips (see recipe here)
• 6 strips of roasted red pepper (see recipe here)
• 6 tablespoons Neapolitan sauce

Preparation

1. Wash and cut the aubergine into 6 slices lengthwise. Ideally, they should not be too thin, as they would break, nor too fat, since they would not have the flexibility to roll.

2. In a frying pan or griddle, heat a few drops of oil and grill the slices on both sides. Remove when they begin to take a golden color.

3. Put on each slice of aubergine a strip of pepper of each color. Roll up on themselves, making sure that the final edge is down so that they do not lose their shape. You can also help yourself with a toothpick to close them.

4. Heat the tomato sauce in the microwave and spread it over 2 plates or a pretty platter. Place the rolls on top and serve immediately.
