Since Mayra published her exquisite red pesto, I did not hesitate: I had to try it with salmon. So let's see how to cook some delicious salmon skewers with red pesto

I love salmon and also  combines to perfection with pesto, both green and red. And in 5 minutes We will have our sauce made and we will only have to make the skewers.

For the skewers you will only need wooden sticks for skewers and salmon loins or slices. Then it is only a matter of dicing the salmon, taking care that there are no bones and no skin.

Ingredients

  • 3 large salmon slices or 3 pieces of the loin
  • 6 dried tomatoes
  • 10 g pine nuts
  • 3 medium-sized basil leaves
  • 1 garlic clove
  • 30 g olive oil
  • 10 g of grated Parmesan cheese
  • 1 pinch of sugar
  • Salt and pepper

Preparation

  1. Hydrate the tomatoes by immersing them in hot water for 15 minutes.

  2. Meanwhile, wash the basil leaves and dry them quickly with a kitchen paper. Reserve

  3. Toast the pine nuts in a frying pan without oil and set aside.

  4. Peel the garlic and reserve

  5. Weigh the oil and reserve.

  6. Add the drained tomatoes, pine nuts, basil leaves and the peeled garlic clove to the glass. Shred for 10 seconds at speed 7. Lower the chips onto the blades.

  7. To emulsify, program 30 seconds, speed 4. Drop the oil on the lid and it will seep, little by little, between the nozzle and the beaker.

  8. Remove the pasta to a bowl and add the grated cheese and sugar. Salt and pepper and mix with a fork. If you see that it is very dry you can add a little more oil.

  9. Serve in a bowl or sauce boat.

  10. We make the grilled salmon skewers. We heat the griddle very well, we do not add any oil because the salmon will be in charge of releasing it. We do them 2 minutes on each side. This way they will be toasted and crispy on the outside and soft and juicy on the inside.
