They are incredibly quick to do. Besides, the applesauce can be do in advance since it lasts several days in the fridge. For this recipe it is not necessary to do the whole recipe because, in reality, we do not need a lot of quantity. Then we just have to mix the foie gras and mount our glasses.
The only secret in this recipe is that the glasses cannot be very large. It is better to use ones that are small because the foie mixture becomes stuffy if you put a lot of it. In addition, what we want to achieve is a original appetizer before a banquet.
These cups of foie gras with compote can be ride instantly but if we want they can be done a few hours in advance. For this, we will place only the compote and the foie mixture, cover them with plastic wrap and store in the fridge. A little while before serving, we remove them and decorate them with the seeds or nuts that we have chosen. In my case, I have decorated them with a mixture of golden flax and poppy seeds. But they also go very well with pistachios or caramelised sesame.

I have prepared it this Christmas as an aperitif. I present it in individual porcelain teaspoons. The applesauce on the bottom, the foie on top

It had not occurred to me to substitute PX for brandy but I think it may be a good option. The foie mixture will be darker but surely just as good.
