This month I am going to finish it as I started it; with a recipe of cherries.

And it is that this summer fruit is so versatile that we can do everything with it. We have already tested them in gazpacho, riding a refreshments and shakes in desserts. And now with this recipe from spicy cherry sauce we will be able to enjoy it with cheeses or meats as in the photo.

It is true that the preparation is a bit long but they are minutes in which we can leave our Thermomix work alone and we continue with other tasks.

Another good feature of this spicy cherry sauce is that, playing with the chilli and ginger, you can give it your special touch.

The spicy cherry sauce is ideal to accompany meats and cheeses. His secret… ginger and chilli!

Ingredients

  • 50 g of leek (only the white part)
  • 1 garlic clove
  • 5 g ginger root
  • 260 g pitted cherries
  • 100 g of mineral water
  • 50 g of red wine
  • 10 g brown sugar
  • 1 dried chilli (without the seeds)
  • 30 g of virgin olive oil
  • Salt and pepper

Preparation

  1. Wash the leek well, removing the outer leaves, cut into large pieces and place them in the glass together with the peeled garlic. Program 7 seconds, speed 5. With the spatula, lower the pieces towards the blades.

  2. Add the peeled and finely grated ginger.

  3. Add the olive oil and program 30 minutes, 100º and speed 1.

  4. Meanwhile, wash the cherries well, remove the peduncle and the pit.

  5. After time, add them to the glass along with the chilli without seeds and add salt and pepper. Program 5 minutes, 100º and speed 1.

  6. Then add the water, wine and sugar. Program 20 minutes, 100º and speed 1.

  7. Then grind for 30 seconds, going from speed 5 to 7. Rectify with salt.

  8. Reheat for 5 minutes at 100º, speed 1 and without beaker. This facilitates the evaporation of the water and the sauce will be thicker.

Notes

This sauce can be packaged as if it were a jam. But if it is going to be consumed shortly, keep it in a clean, airtight container in the fridge. Holds perfectly a week.
