I love summer because I have more time to spend with friends and organize meals with the family. The bad thing is the temptations ... the beers with an aperitif, the endless after-hours, the snacks with ice cream. So when the night comes and after so much excess, I only feel like salads or light vegetables. Broccoli with orange vinaigrette is one of the recipes that help me control me in summer.

It is clear that to make this recipe you have to like the broccoli because it is the main ingredient and almost, almost unique. But if, like me, you are one of those who love "green trees" you are in luck. This recipe is healthy, easy and fast.

To decorate the broccoli with an orange vinaigrette, I usually add almonds that give it a very Mediterranean flavor and give it a crunchy texture. Needless to say, this recipe is 100% vegan and suitable for a balanced diet.

Ingredients

  • 400 g broccoli
  • 5 peeled almonds
  • 1 tablespoon philated almonds
  • 30 g olive oil
  • 1/2 orange
  • Salt and pepper

Preparation

  1. We wash and cut the broccoli into florets. We put them in varoma and steam them. To do this, we fill the glass with water up to the 1/2 liter mark, we place the varoma in its position making sure it is well closed. We program 15 minutes, varoma temperature, speed 2.

  2. Meanwhile, in a small frying pan, brown the almonds without oil or similar.

  3. After time we check that the broccoli is to our liking. There are those who prefer it more “al dente” and those who like it softer. If so, extend the cooking for a couple of minutes.

  4. We remove the varoma and discard the water. We rinse and dry the glass well. We chop the toasted almonds by programming 5 seconds, speed 5. We withdraw and reserve.

  5. Without washing the glass, add the filtered orange juice. We program 30 seconds, speed 3 1/2 and pour the oil over the lid. In this way it will fall into the glass and emulsify. Add the chopped almonds, season to taste and mix well with a spoon.

  6. We put the broccoli in a source or in individual plates. We drizzle it with the orange and almond vinaigrette. We finish decorating with the rolled almonds.

    Very rich!!! I did it yesterday morning so that it was macerated and we had it for dinner, they asked me to do it more times and that around here they are not very fond of broccoli !!! Thanks!!
