During the weekend we always allow ourselves little whims We can't have it every day, so what do you think if we make some stuffed paninis for dinner?

It is a very simple recipe, we only have to empty a few bread rolls as if they were boats. Then we can fill them with what we like the most. In this case I have used a very classic mixture based on Manchego cheese and bacon. The result is surprising because the filling grows like a souffle and they are juicy. We have liked them so much that I am already thinking of filling them with other ingredients.

To make these stuffed paninis we can use our favorite bread either white, whole wheat, or rye bread like the ones in the photo. The next time I make them, I'll dare with a baguette ... can you imagine?

Ingredients

  • 4 60 g bread rolls
  • 50 g onion
  • 5 g olive oil
  • 3 eggs
  • 130 g of cream
  • 75 g of bacon in strips
  • 50 g of cured Manchego cheese
  • Oregano

Preparation

  1. We preheat the oven to 200º with heat up and down.

  2. We cover a plate with kitchen paper and place the bacon strips on top. Cover and place in the microwave for 3 minutes at maximum power or until golden brown.

  3. Meanwhile, we grate the cheese by programming 5 seconds, speed 8. We withdraw and reserve.

  4. Without washing the glass we put the onion, we chop it by programming 3 seconds, speed 5. Add the oil and poach 10 minutes, 100º, spoon speed. We withdraw and reserve.

  5. Without washing the glass, we put the butterfly on the blades. Add the eggs, cream, oregano and grated cheese. We beat 15 seconds, speed 3 1/2.

  6. We reserve a tablespoon of the bacon and add the rest to the glass along with the onion. We mix during 5 seconds, speed 3 1/2.

  7. With scissors we make a rectangle-shaped cut in the upper crust. We remove the crust and part of the crumb but not all of it because otherwise the filling will not remain inside the bun. We reserve the crumb for another preparation. We distribute the filling among the 4 buns. We put the reserved bacon pieces on top and a little more oregano. We place them on a tray and bake for 10 minutes or until the filling is set and the top has a nice golden color.

Notes

If you want to give the filling a more yellow color, you just have to add a teaspoon of turmeric to the eggs and beat them. You'll see that I change.
