Homemade meat stock tablets (Avecrem® type)

Today I would like to present my latest great discovery: the homemade bouillon tablets (Avecrem® type).

Many times we use a meat stock tablet to enhance the flavor of our stews, stews, sauces ... but it is true that we do not know exactly what they are in and how they are made. Well now we can make them ourselves, thus having a much healthier and cheaper meat broth.

When you do, you will see that the texture It will not be like the pills we buy, it will be more like a puree (although this will depend on the water in the vegetables and the salt we use). So a teaspoon of our broth will be equivalent, more or less, to a purchased pill (it would be 1 teaspoon for 500 g of liquid). In addition, thanks to this texture, it dissolves quickly in hot liquids.

I love this recipe because we can make a lot of quantity and keep it Inside a well closed jar in the fridge for 1 year due to the high amount of salt it contains.

In addition there is also the vegetarian version, filled with vegetables and no meat.

      I'm very glad you like it. Those who have invented the recipe say that due to the high amount of coarse salt it contains, it keeps it perfectly for up to 1 year. But, in my case, since I use it quite a bit, it doesn't last a year. Anyway, you can always make half the amount and you will spend it earlier.

      Yes it holds all that time, I attest. This recipe is in the "Essential" book that comes with the Thermomix, and I have made the recipe from the beginning, it is wonderful. I also add a clove to it, and what I always put among the vegetables is leek, because it gives it a lot of flavor.
      The idea is to always put the same weight of meat, vegetables and coarse salt. That is, if you only have 140 grams of meat, then put 140 grams of vegetables and 140 grams of coarse salt. Excellent!!!

      Now with this recipe, you can use it for many other things, replacing it with salt. This, in addition to salt, will enhance the flavor of your dishes. It cannot be frozen due to the high amount of salt it contains, it would never freeze. You will tell us if you like this new invention.

You can also put it in ice buckets and freeze it and that way you would have the form of individual tablets. You open the bottle and add the amount you need (generally it will be one or two tablespoons at most), then flatten it well to cover the gap left by the tablespoon or tablespoons you have taken, close the bottle and direct to the fridge again. It will last you at least 6 months, salt is a great preservative.

      no, you can NOT use the chicken carcass, sorry! In the tablets we need to crush everything ... so the carcass here is useless. Thank you for following us!

    As I previously said in a comment, ALL industrial stock concentrates (except those sold in herbalists) contain MONOSODIUM GLUTAMATE, which is what is commonly called a "flavor enhancer" and that they take apart from Avecrem, potatoes with flavors of ham, cheese, hookahs, doritos ... And many products that children eat.
