Homemade meat stock tablets (Avecrem® type)

Today I would like to present my latest great discovery: the homemade bouillon tablets (Avecrem® type).

Many times we use a meat stock tablet to enhance the flavor of our stews, stews, sauces ... but it is true that we do not know exactly what they are in and how they are made. Well now we can make them ourselves, thus having a much healthier and cheaper meat broth.

When you do, you will see that the texture It will not be like the pills we buy, it will be more like a puree (although this will depend on the water in the vegetables and the salt we use). So a teaspoon of our broth will be equivalent, more or less, to a purchased pill (it would be 1 teaspoon for 500 g of liquid). In addition, thanks to this texture, it dissolves quickly in hot liquids.

I love this recipe because we can make a lot of quantity and keep it Inside a well closed jar in the fridge for 1 year due to the high amount of salt it contains.

In addition there is also the vegetarian version, filled with vegetables and no meat.

So we encourage you to prepare it because when you try it you will love to prepare your own homemade pills.

I congratulate you on this original recipe. It is the first time I have seen a recipe of this type. What I have doubts is whether it can really last that long in the fridge without getting sick.

    1.    Irene said

      Hello Cook,
I'm very glad you like it. Those who have invented the recipe say that due to the high amount of coarse salt it contains, it keeps it perfectly for up to 1 year. But, in my case, since I use it quite a bit, it doesn't last a year. Anyway, you can always make half the amount and you will spend it earlier.

    2.    Carmen said

Yes it holds all that time, I attest. This recipe is in the "Essential" book that comes with the Thermomix, and I have made the recipe from the beginning, it is wonderful. I also add a clove to it, and what I always put among the vegetables is leek, because it gives it a lot of flavor.
The idea is to always put the same weight of meat, vegetables and coarse salt. That is, if you only have 140 grams of meat, then put 140 grams of vegetables and 140 grams of coarse salt. Excellent!!!

      1.    Irene said

        Hi carmen!
Thanks for your comment, it is always good to know that a recipe turns out well. I have to try making them out of fish and vegetables. I'll try the cloves next time, it sure gives it an interesting touch.

Well, we will have to try! I don't usually use avecrem pills a lot, but for example to make Cuban rice, or vichyssoise I do. And it can't be frozen?

    1.    Irene said

      Hi Jessie,
Now with this recipe, you can use it for many other things, replacing it with salt. This, in addition to salt, will enhance the flavor of your dishes. It cannot be frozen due to the high amount of salt it contains, it would never freeze. You will tell us if you like this new invention.

I really like your blog the recipes are fantastic, but I would like you to give some recipes for diabetics but with the amount of sweetener to be possible especially in a matter of confectionery… .thanks

I use them and also fish 😀, it is a very good way to flavor your dishes; and in a natural way. Now I want to make some only vegetables. Of course, I keep them in the freezer; and although they do not freeze completely, they remain quite tough.

    1.    Irene said

      Hello Paula,
Of course, because of the salt they do not freeze, but if the texture is good, it is also interesting to know. Thanks for your comment!

Phenomenal!! I really liked it, I think it is a good and much healthier alternative to commercial meat broth tablets. Greetings

      Mari Carmen5,
try them, you will surely like them. In this way we avoid eating the industrial ones… we don't really know what they really carry. You will tell us if you liked it!

How interesting, the truth is that I do not use the thermomix as much as I should. I have a question ... How is it used? Put it in a jar and use it by the spoonful?
Forgive my ignorance, thank you, greetings

        1.    Irene Arcas said

Hello Yaya, indeed, that's how I use it, a small teaspoon would be equivalent to a pill. You can also put it in ice buckets and freeze it and that way you would have the form of individual tablets. You will see how useful they are 🙂 And ignorance nothing, how do you think the rest of us have started? A kiss and thanks for writing us, here we are for what you need.

Thanks for this simple recipe, the truth is that I use commercial meat pills quite little because of the salt issue, I think that we all have to recover natural cuisine to be healthier.

    1.    Irene said

You can use these homemade pills more, because they are healthier. Of course, you can add less amount of pill to your dishes and thus control more the amount of salt. It is true that we must recover the natural kitchen ... sometimes because of the type of life we lead we resort to the easy, and many times it does not take so long to do things at home. Thanks for your comment!

Does anyone know how to make the fish recipe? If both one and the other have the same ingredients.

    1.    Irene said

Hello Pepa, the fish is made exactly the same as the meat, but substituting the grams of meat for fish (fish, hake, sea bass, sea bream, monkfish ...). The rest of the ingredients would be the same.

    Hello. Thanks for your contributions.
Does anyone know how to make a vegetable or vegetable broth pill?
    Thank you

    1.    Irene said

Hi Juanjo, I have never made bouillon tablets, but the recipe I have would be to put about 800-900 grams of vegetables and 300 grams of coarse salt, but I cannot assure you… I'm sorry. If you do, it would be great if you could tell us how about it, okay? Thanks!!

Let's see that I find out, so you can open and close the pot as many times as you want and it doesn't get bad?

    1.    Irene Thermorecetas said

Marikilla, of course, that's what it's all about. You open the bottle and add the amount you need (generally it will be one or two tablespoons at most), then flatten it well to cover the gap left by the tablespoon or tablespoons you have taken, close the bottle and direct to the fridge again. It will last you at least 6 months, salt is a great preservative.

Hello, if I have a chicken carcass, can I use it? I imagine that I would have to put it in the basket, but since the recipe does not have water, I do not know if it will be of much use. And in case it can be used, do I leave the same amount of the other things or do I take away some meat?

    Thank you!!

    1.    Irene Thermorecetas said

      Hi John,
no, you can NOT use the chicken carcass, sorry! Save it better to make a delicious stock or chicken broth (I leave you the link to the stew broth: http://www.thermorecetas.com/2011/02/19/receta-thermomix-caldo-de-puchero-con-gallina/). In the tablets we need to crush everything ... so the carcass here is useless. Thank you for following us!

  14.   LUISA said

Hello Irene, thank you for your gift made in the form of a concentrated broth !!
As I previously said in a comment, ALL industrial stock concentrates (except those sold in herbalists) contain MONOSODIUM GLUTAMATE, which is what is commonly called a "flavor enhancer" and that they take apart from Avecrem, potatoes with flavors of ham, cheese, hookahs, doritos ... And many products that children eat.
It is very toxic, and that is why I would like to leave a link, so that through this page with such wonderful recipes, it can be read by anyone interested in health issues and healthy and balanced eating
I hope it helps you !!!
By the way, to make the fully vegetable broth, you can omit the 300gr. of meat for another 300 of vegetables ??
In total 600 gr. of vegetables and 300gr. of salt?
    Thanks. A hug

    1.    Irene Thermorecetas said

Hi Luisa, thank you very much for your comment, it is very informative. For the vegetable broth, I would put about 700-800 grams of vegetables per 300 grams of coarse salt, so that it is not excessively salty. You will tell me!

My question is about wine. I would use it to make meals for girls and I do not know if it is convenient for them to take, although it seems very little ... Do you know something about whether recipes for children can be harmful if they have some wine? Could it be done without wine and would it be the same?

Thank you and congratulations for your blog. Love it!

    1.    Irene Arcas said

Hello María, you can use it with complete peace of mind because the wine, when cooked, evaporates all the alcohol. Anyway, how old are your girls? Perhaps, if they are very small, it is not convenient to use bouillon cubes due to their high salt content. Thanks for writing to us! A big hug from the kitchens of Thermorecetas 😉

  17.   Lola said

And is it not possible to lower the amount of salt and freeze in cubes?

    1.    Irene Arcas said

Hi Lola, no problem, you would have some low-salt pills and, therefore, you would have to use more when you use them 🙂

  18.   Beatríz said

Hello, in the book that comes with the thermomix the amount of salt is half, 150grs.

Hi! Thanks ! I'm a novice and I have tm21 ... I understand that the instructions you give are from tm31 and I would have to do the conversions, right?
Sorry if the question is obvious ... so in general your blog is explained for the tm31 right?

    1.    Irene Arcas said

Hello Lore, ask what you need we have all been newbies and we have learned by asking !! So don't have a problem asking us anything. Well yes, this blog is oriented to the TM31, so here I leave you this post where we explain the difference between all the models and where you will see a table with equivalences so that you can adapt any recipe to your thermomix model. Good Morning.
Yesterday I made this recipe and it came out quite salty 😭

    1.    Irene Arcas said

Hello MªDolores, you can adjust the salt a bit to your liking, but remember that excess salt makes it the preservative in this recipe. You can reduce the amount of salt in the recipe or use less salt in meals. Thank you for your message!
