First of all I will tell you that in the market you will find several types of Provencal herb mix. Each one with more or less quantity of the different herbs although you can also do it easily at home.
Although I have a very large grocery store, I don't have a specific pot with Provencal herbs. So I do it instantly with a dash of thyme, rosemary, oregano, basil, marjoram, chervil, tarragon, fennel and a dash of lavender. I mix it up and I have my particular mix ready.
This recipe can also be made by putting the potatoes in the glass. This way you will have the varoma available to perform other preparations.
If you have a portion left over can be frozen, it holds perfectly up to 3 months in an airtight container. However, the potatoes will not have the same texture or flavor so it is better not to include them.
