You already know that I am passionate about curds and I am always looking for recipes. So when I find things as interesting as this vegan lemon curd I can't resist trying it and I'm warning you… this is another world!

It is true that the difference with the original recipe is that does not carry eggs but really ... Who wants to be a purist having recipes with much more flavor ?. The truth is that I can't imagine such a good result.

It is also still as easy to make as the traditional recipe, so in less than 30 minutes you will have this vegan lemon curd ready to use in cakes, cookies, desserts or on toast.

As I mentioned before, the original recipes from both lemon and other flavors, they carry eggs. The good thing is that it has more flavor, in fact the lemon flavor is much more intense. The least good thing is that it is a bit more difficult to achieve that silky texture that the original recipe has.

El coconut oil It cannot be substituted either by olive oil that will give it a lot of flavor, nor by sunflower or corn oil. Only coconut oil has that thick texture we need to give this curd body.

The pinch of turmeric it is very necessary. You yourself will see the change and you will be able to compare between before and after. It goes from having a pale yellow color to having a super flashy tonality ... even if you don't go overboard either!

And on flavorDon't worry because the lemon is so present that you won't notice either the turmeric or the cornstarch.

It can be done with sugar normal although calories increase. You could also use another type of sugar such as brown sugar, although I think it would give it a darker color.

With what I have more doubts is with the rice or agave syrup. I think this recipe needs more solid textures That liquid so that it takes shape but, if you have tried it, tell me about your experience and tell me how it went.

And speaking of texture, you can play with the cooking minutes to give it a thicker or more liquid texture. I have put it 20 minutes and it has been perfect for me to prepare an ice cream that I will show you.

If you want it to spread toast or to fill biscuits you will have to leave it for a few more minutes. But remember that when cooling it tends to solidify a little.

In the fridge lasts up to 2 weeks although I think it would last longer but at my house we finished it right away !!
