When serving it, I recommend that you use volcanoes or tartlets because it is not the same to present a scrambled egg without more than surprising your guests with these puff pastry and its juicy filling. Although the presentation takes a little more time, it is so beautiful that we can resist.

I have used large volcanoes. But if you are thinking of organizing a buffet I recommend you use smaller ones, with these amounts it will surely give you a good tray.

Ingredients

• 4 volcanoes
• 1 garlic clove
• 1 dried cayenne
• 20 g olive oil
• 12 peeled prawns
• 100 g of defrosted anguriñas
• 2 eggs at room temperature
• 30 g of cream
• Chopped parsley
• Salt and pepper

Preparation

1. Preheat the oven to 170º.

2. Put the oil in the glass and heat it for 4 minutes, 100º, speed 1.

3. While peeling the garlic and cutting it into thin slices. Remove the seeds from the chilli. When the time is up, add the garlic and chilli and program 5 minutes, Varoma temperature, speed 1.

4. Place the volcanoes in the oven for 8 minutes or the time indicated on the package.

5. Put the butterfly on the blades, add the prawns and the anguriñas. Sauté for 5 minutes, Varoma temp, speed 1, left turn.

6. Remove the prawns and part of the anguriñas to a plate. Put the lightly beaten eggs, the cream and season. Program 4 minutes, 100º, speed 2.

7. Mix the anguriñas and the reserved prawns with the scrambled eggs. Rectify with salt and pepper if necessary. Fill the volcanoes and sprinkle a little chopped parsley.

8. Serve while hot.

Notes

You could make the recipe without removing the anguriñas and prawns, but I like to set aside some of them because that way they don't break and remain whole and the volcanoes will be much better presented.
