Wholemeal sponge cakes

whole-grain biscuitsthermorecetas

Eating a balanced diet does not mean that we have to give up Bakery. Although, it is true that, if we make them at home, it is easier to control the quantity and quality of the ingredients and the production process.

These whole grain cakes are made with coconut sugar whose glycemic index is 35 and which is very interesting for those with diabetes. If you do not have this type of sugar, you can use whole sugar.

It should also be borne in mind that the cakes have cocoa that gives them a crunchy touch and a much more adult flavor than chocolate since it is not sweet. It contains antioxidants and nutrients that make it very beneficial to our health.

The result is some light wholemeal cakes, very easy to prepare and that, due to their flavor, will become essential in our breakfast.

Mayra, please, could you tell me the mixture of seeds, I want to make them and I'm lost with the spoonful of the mixture of seeds.
Yesterday I made a tangerine cake with an almond crust, it came out dead, that crust I will put on many cakes, it was delicious and gives it a perfect finish ... Thanks for the recipes, without this page I would not know how to cook, with the thermomix …..ha ha ha

      Hello Núria:

In organic food stores they sell a mixture of crushed seeds. But if you want to make it at home, you just have to put a tablespoon of flax seeds, sesame seeds, Goji berries, sunflower pimas, pumpkin and chia in the Thermomix. Blend for 3 seconds, speed 8.

You can make the combination that you like the most. Be sure to try this mixture with yogurts or vegetable creams. It will have a nutritional plus.

      Regards!

Have you tried it with Extra Virgin olive oil of the Arbequina variety? Is it a variety of olive that gives a very smooth oil ideal for desserts? and a thousand times healthier than the sunflower

    1.    Mayra Fernandez Joglar said

      Hello Rocio:

I know that olive oil is one of the oils with the most benefits for our health, since it protects our cardiovascular system and contains a high amount of vitamin E. However, to take advantage of the benefits it provides, we must consume it raw or at temperatures Very low.

Personally, when making cakes, I prefer to use another type of oil to resist high temperatures better. We must bear in mind the smoke point, where the oil begins to decompose and loses its properties, generating toxic substances that are harmful to our body.

I insist that this is a personal opinion. Everyone is free to make the recipes as they see fit.

      Regards!!

        Hello Rocio:

I am not going to enter this debate because it seems that I am angry and it is just the opposite. I love that everyone modifies our recipes to their liking.

        Regards!!

Hello Mayra, it seems that this has become a debate and it was not my intention; I simply wanted to contribute an idea to this recipe to make it even healthier and tastier. As you have been able to read in the link that I have uploaded, Olive oil, contrary to what you and many people think (there is a great lack of information on this subject), is more stable than those obtained from sunflower seeds or other seeds. vegetables; For this reason, it degrades more slowly at high temperatures (never exceed 180º).
          Regards…

Hello, they look very good! Which pieces of cocoa are you referring to, cocoa beans or how exactly? Thanks

    1.    Mayra Fernandez Joglar said

      Hello Maria Luisa:

I buy the cocoa in pieces. They call them nibs and they are perfect little bits for this recipe.

If you can't find cocoa, you can use chocolate. It is not the same but it will give your cakes a delicious point!

      Regards!!
