Those of you who know me already know that I love spoon dishes. In summer, we have to sharpen our ingenuity if we want to continue eating these types of dishes. One of my favorite creams is cream of zucchini, so today I bring you my adaptation of this wonderful cream to the summer. You will see what a delicious thing!

What I like the most about this recipe is that it has a lot of leek, one of my favorite ingredients. This cream would be a mix between a normal zucchini cream and a Vichyssoise. Adapting to summer consists of taking it warm and making it quite liquid, but if we wanted to drink it as in winter, we would simply have to reduce the amount of liquid a little.

Ingredients

  • 30 g oil
  • 30 butter g
  • 150 g leeks (white part)
  • 1 garlic clove
  • 700 g of courgettes very well washed and chopped
  • 700 g of vegetable broth
  • salt, pepper, nutmeg
  • 8 cheeses
  • 200 semi-skimmed milk

Preparation

  1. We put the oil, the butter, the leeks cut into large slices, the garlic in the glass and crush 8 seconds, speed 5. We lower the remains of the walls and the lid towards the blades and program 12 minutes, varoma temperature, speed 2.

  2. Add 200 gr of the vegetable broth and blend 40 seconds at speed 7. Add all the remaining ingredients except the cheeses and milk and set [b] 20 minutes, temperature 100º, speed 1.

  4. When the time is up we wait for the temperature to drop a bit and grind 1 minute, progressive speed 5-7-10.

  5. Add the cheeses and program 5 minutes, temperature 90, speed 3.

  6. Add the 200 g of milk and mix a few seconds, at speed 4. It has to be a fairly light cream, so if it is a little thick we add more milk or water.

  7. You can accompany it with croutons.

      Well, the truth is that you can take it as you want, hot or cold. I particularly like it warm !! LOL. You will tell me. The important thing is that it is more liquid than the creams we make in winter.
