This way we can all enjoy this traditional sweet, even people vegan or vegetarian.
The truth is that the challenge was proposed to us by a reader who told us that her little one is allergic to eggs and milk and that he couldn't eat the monkeys at school. After hearing this comment we got to work. You already know that we are very sensitized and involved with food allergies and intolerances and we like that everyone can enjoy the traditional Easter recipes although they are slightly modified.
These monas, made with oat milk and applesauce, are easy to make, you just need a little patience for the dough to rise slowly. They take their time but you can see the result in the photo, an Easter monkey without eggs and without milk. fluffy and very rich.

Ingredients
100 g of sugar
50 g orange juice
Zest of 1 orange
50 g of applesauce (you can see how it is done in this prescription)
50 g of oat milk (you can see how it is done in this recipe)
25 g fresh yeast
75 g of sunflower oil
375 g of bread flour
1 pinch of salt
Oat milk (to paint the monkeys)
Anisette or small sugar balls
Preparation
We heat the oat milk in the microwave for a few seconds, a maximum of 15. It must be warm, if it is hot it will kill the yeast and the dough will not rise. Dissolve the yeast in the oat milk and let it rest.
Meanwhile, put the sugar, applesauce, zest and orange juice in the glass. We mix during 20 seconds, speed 3.
We add the oat milk with the yeast. We mix others 20 seconds, speed 3.
Add the oil and mix again 20 seconds, speed 3.
We add the flour and the salt. We mix 10 seconds, speed 6. Then we program 5 minutes, glass closed, spike speed.
We remove the dough to a large bowl sprinkled with a little flour. We remove the dough from the glass and put it in the bowl. It is sticky but soft and it will take a while to remove it from the blades. We let the dough rest 3 hours or until it has doubled in volume. It will have to be covered with a clean and slightly damp cloth and in a place free from drafts.
After the time has elapsed, we sprinkle the work surface with a little flour and slightly degas the dough. We will have to do it gently, treating the dough carefully to deflate it a bit but leaving it with part of the bubbles.
We divide the dough into 8 portions and we give them the shape we want. You can make buns, braids, turtles, crowns, etc. As we make them, we place them on the oven-safe tray covered with baking paper. Let the dough rest again for 1 hour or until doubled in size.
Preheat the oven to 180º and paint the monas with the oat milk and using a kitchen brush. We finished decorating with the colored anisette.
We bake between 10 and 15 minutes or until the surface is golden. It will depend on the size of the pieces. Remove, let stand a few minutes and transfer the monas to a rack to finish cooling.
