Some time ago we started a thematic cycle of Mexican Kitchen with recipes like guacamole, tacos y Fajitas. Today I wanted to continue contributing typical and delicious Mexican recipes so that you surprise your friends and for that, nothing better than some Mexican quesadillas with guacamole and pico de gallo.

Let's see how these exquisite (and very easy) are prepared quesadillas with guacamole and pico de gallo, which is a fresh and healthy accompaniment, based on tomato and chives, ideal to accompany Mexican dishes. And, of course, the main ingredient, cheeses that melt well.

Ideal for a dinner, an aperitif, for children and for a light meal.

Ingredients

  • 4 Mexican wheat tortillas
  • 4 slices of cheddar cheese
  • 4 slices of Emmental cheese
  • 2 not very ripe tomatoes
  • 1 small spring onion
  • parsley (or coriander)
  • jalapeño (optional, I did not put it)
  • lemon
  • shawl
  • guacamole

Preparation

  1. We crush the chives that we have cut in half 6 seconds, speed 5. Reserve.

  2. We follow the directions to prepare the guacamole. We booked.

  3. Finely chop the tomato with a knife and a board. In thermomix we would be excessively liquid and crushed by the amount of water in the tomato.

  4. In a large frying pan we place an omelette and heat over medium heat for 10 seconds on each side. When we are on the second side we add the 2 slices of cheese in one half of the wafer and close the wafer. Cook in the pan for 1 minute over low-medium heat on each side until golden brown and the cheese has melted.

  5. We serve quickly to take it freshly made. We accompany each bite with guacamole and pico de gallo ... exquisite.
