I love this recipe, it is one of my favorites. I met her at my mother-in-law's house, she does it many times when I go to eat because she knows that I love the Cod.

      Hi Kike, when in the recipe you put speed spoon you put speed 1, and yes, use the butterfly. The T 31 takes longer to warm up, so the times are longer. So you can either reduce the times for the T-21 a bit or leave the time the same and reduce the temperature. You will have to do it a little by eye, is that I do not know the T21 so well, because when I started using the thermomix it was 31 ... I'm sorry I can't help you anymore ... sorry.

Today I decided to make this recipe that I had not tried yet and I really liked, it has a very delicate flavor, but I wanted to clarify some doubts. The first is that the ingredients put 200 gr. of water and when comparing the recipe with the one in the book I see that it only says 100 gr, my question is, is it a mistake when writing the amounts or do you do it like this? It is that it has come out not very consistent, too liquid and I have followed the steps to the letter, perhaps it is for those 100 gr. the rest.
    And another question, I have also seen that in the first step you simplify by adding all the ingredients at the same time and programming the machine instead of heating the oil and adding the ingredients step by step as indicated in the original recipe, do you do it like this to save time and the result is the same? I am curious to know because as I have already said it is the first time that I prepare it but it will not be the last. Thank you very much for facilitating our work in the kitchen.

      Indeed, it was my mistake, they are 100 gr of water and not 200. I apologize for that. Anyway, nothing happens if you add a little more than 100 gr because later when it cools it thickens a lot, so if you want to drink it from one day to the next, it will be juicier. I think that about 150 grams would be perfect.
      As for the first point, I do it because my mother-in-law told me to do it like this, but of course, it can be done the other way (in fact, I have changed it in the recipe) so that each one does as more He liked me. I'm sure the sautéed onion is better, but it can be done both ways.

I suppose that what we should avoid is that so much time of rest makes the potatoes suck the sauce, so I think you could add a little more liquids , so much water, milk and cream ... (maybe about 50 gr more of each) but I have never tried it, really. I would do it like this. You'll tell me how. Anyway, when you are going to put it in the oven, look to see how much liquid you have, and if you have something thick, you can always correct it just before putting it in the oven. Lucky!
