Alfredo noodles

Noodles_alfredo

I loved this dish from the first moment I tried it. My friend Jenny prepared it for me and I quickly asked her for the recipe to adapt it to the Thermomix. Is about pasta, in this case noodles, with cubes of seasoned chicken and a tasty cream cheese sauce.

The cream sauces for pasta are delicious, so if you have not tried recipes like the spaghetti carbonara, prepare them because you will love them.

I have a couple of questions (I'm from Mexico)

Is cream the same as whipped cream?

What grated cheese do you recommend?

    thanks andreu

Hello Andreu, here in Spain we have two types of cream, one for cooking that has approximately 18% fat and another for whipping (which would be your whipped cream) that has an MG of approximately 35%. It is a liquid cream, which is usually sold refrigerated in 200 ml packages. For this recipe, cream with less fat would go very well. Cream is a liquid substance, that is, it is not whipped like whipped cream. Does this help you in anything? It would be like milk but thicker. I'm not sure if it could be that in Mexico you call it milk cream ... it would be something similar to whipped cream but before beating ...

On the cheese, a mixture of cheeses to melt that are already sold grated is very good, and that may contain, for example, cheddar, emmental, grouyere, mozzarella ... it is a bit to your liking, the important thing is that they are cheeses that blend well with the hot.

I hope Andreu has helped you, if not, please ask again without any problem ... let's see if we can find the equivalence of Spanish and Mexican cream 😉

Hi Andreu. In Mexico it is the whipping cream, I think you have a bottle or a brick of the Lala brand and there is also the Lyncott brand. Nestlé's half cream would also do the trick. A hug!

Brutal this recipe, I made it with spaghetti two days ago and I'm going to make it again today. It really is wonderful.

The authentic ALFREDO sauce does not have cream.
Butter, Parmesan, nutmeg, pepper and 2 or 3 cups of the water with salt and starch, which has released the pasta during cooking.
The same texture of a light béchamel.
