Here are the okara cookies I promised you. They are rustic-looking but very crisp and nutritious.

It is a recipe for use because they are made with the okara of the Almond milk that we prepared the other day. Although they can be made with the okara that we like the most, Cashews, hazelnuts, etc.

How is one gluten free recipe You must check that both the baking powder, the cinnamon, the vanilla and the oat flakes are suitable for the intolerant. There should be no problems, but it is better to see if the label puts any recommendations.  After several conversations with professionals, I rectify this recipe since oatmeal is a cereal that also carries gluten.

With this recipe, about 24 units come out, perfect for breakfast or even for the picnic since they are very nutritious because they contain nuts. Very necessary if we want to have a balanced diet.

      Okara is the paste that remains in the filter after making vegetable milk. They are moist pieces of almonds, cashews, oats ... it depends on what you have made the milk. So it's a shame to throw them away.

      If you make the recipe for almond milk, you will get about 60 grams of okara, which is what you have to put in the cookie recipes.

      The okara is not sold or found in supermarkets, you have to make it. And of course, if you don't add okara to these cookies, they won't be okara and I don't think they will come out because they add moisture to the dough.

Regarding the subject of oats, I will tell you that the latest news says that oats themselves are gluten-free (they have avenin, which some celiacs do not feel good about, so you have to introduce it little by little and see how it reacts the body). But it is usually contaminated with gluten. However, now there are more and more brands that sell it gluten-free. I'll tell you if you want to make any changes to the recipe.       Yes you can put different types of flakes but remember that wheat is not suitable if you are on a gluten-free diet. You can use millet or quinoa.

      For the egg, I think a flax egg or 60 applesauce can work for you but I have never tried it.
