Artichoke and anchovy mousse

The other day some friends came to my house for dinner and I wanted to prepare some different aperitif, light (after the excesses of the holidays), fast and that it could be prepared in advance. The artichoke is an excellent food nutritionally speaking: it has very few Kcal (approximately 22 per 100 gr), favors the fat removal and collaborates with liver function. It is also very versatile since we can prepare them lemon, to beer o with ham.

In this case, we are going to prepare a tasty mousse, with all the flavor of the artichoke, which we will enhance with some anchovies and which will be perfect to spread on biscuits. Also, it couldn't be easier.

    Hello Irene!! In my case, as I am a vegetarian, I did it without anchovies but I put a piece of garlic in it, it came out very rich, although I think that next time I will reduce cheese, because it eats the flavor of the artichoke, and I will add some oil of olive. Thank you!!
