Avocado cream? Well yes, one summer cream to appease high temperatures. A flavor very similar to guacamole but with the unique creaminess that avocado provides.

The good thing about our country is that it produces a great variety of fruits, vegetables and vegetables with great quality, which allows us to make impressive recipes that range from the great classics such as gazpacho, salmorejo or ajoblanco to creations such as fresh cucumber and mint cream or the cold peach cream. So there is no excuse to wear one in the summer healthy diet.

This avocado cream can be taken both warm and cold, although not frozen to appreciate the smooth flavor of avocado. The touch of tomato and coriander is essential to enhance the flavors.

A recipe with a unique creaminess that will help us to have a healthy diet in summer

Ingredients

  • 100 g onion
  • 1 garlic clove
  • 20 g olive oil (10 g +10 g)
  • 1 liter of vegetable stock
  • 3 avocados
  • Lemon juice
  • 1/2 tomato
  • 30 g low-fat spreading cream (cheese, soy ...)
  • Chopped cilantro
  • Salt and pepper

Preparation

  1. We peel the onion and garlic. We bite programming 5 seconds, speed 5. We lower the pieces towards the blades. Add 10 g of oil and fry 5 minutes, 100º, speed 1.

  2. After time, add the vegetable broth and cook for 10 minutes, 100º, speed 2.

  3. Meanwhile, we take the time to peel and remove the pit from the avocados. We sprinkle them with the lemon juice to prevent them from rusting. And also to wash the tomato and chop it in brunoise.

  4. After the time, we grind the broth for 1 minute, speed 8. We withdraw and reserve.

  5. Without washing the glass, we put the avocados in the glass with the other 10 g of oil. Add salt and pepper to taste and blend for 30 seconds, speed 4. We check that there are no large pieces left and that they have become a homogeneous cream. If not, we will shred again.

  6. We reserve 1 or 2 tablespoons of the broth. We program 1 minute, speed 3 and we add for the rest of the broth.

  7. In a bowl, mix the cream cheese with the reserved broth until you get a fluid but thick cream.

  8. We distribute the avocado cream in four deep plates or bowls. Decorate with the cream cheese and distribute the tomato cubes on top. We finish decorating with a little chopped coriander.

Notes

At the time of serving you can dress it with a drizzle of lime. You will be surprised by the contrast!
