The blueberry and orange muffins are very easy to do above all if they have given you the mixture to prepare them. In a few minutes and in a comfortable way you will have prepared a simple breakfast for tomorrow.

These muffins they have less sugar than other versions. One of my purposes for this new year is to reduce consumption and adapt to the real flavors. So there is nothing like putting these small changes into practice.

Also these muffins have a delicious orange scent and the slightly tart touch of the blueberries goes perfectly.

Blueberry Orange Muffins

Ingredients

  • 250 g of flour for gluten-free pastries
  • 75 g of sugar
  • 15 g baking powder (booster) (see recipe)
  • 1 pinch of salt
  • 10 g of powdered orange peel (see recipe)
  • 65 g dried cranberries
  • 1 egg at room temperature
  • 60 g butter, melted but cold
  • 200 g of milk or vegetable drink at room temperature

Preparation

  1. We preheat the oven to 180º with heat up and down.

  2. We put the paper or silicone capsules in a muffin or cupcake mold.

  3. With the clean and dry glass we add the flour, the sugar, the baking powder, the salt and the dehydrated orange. We mix during 10 seconds, speed 8.

    Remove to a bowl, add the blueberries and reserve.

  4. We put the egg in the glass and beat it for 1 minute, speed 3.

  5. Add the melted butter and mix for 30 seconds, speed 3.

  6. We program 2 minutes, speed 2, left turn. Add the flour and blueberry mixture through the bottle in three batches, interspersing the milk or vegetable drink.

  7. Fill the capsules without filling them completely and place them in the middle of the oven.

  8. Bake for 15 or 20 minutes or until they have a nice golden color and, when punctured in the center, the stick comes out clean.

  9. Remove from the oven and let cool on a rack.

    When they are at room temperature they can be served.

This version is gluten-free but if you want you can do the normal version. For this you will only have to change the flour for wheat flour for pastry. The rest of the process is exactly the same, even the baking time.

You can use the milk you like the most or any vegetable drink. Although I recommend that it be neutral in flavor so that it does not cloud the flavor and fragrance of the orange.

With these amounts, 12 medium-size muffins come out. They keep well for 3-4 days in a tin or similar container. Although remember that also can be frozen. The result is so good that you won't even notice it.
