With this cream ice cream with caramelised nuts we officially inaugurate the summer season this year. I know there are still weeks until summer really comes but why wait for enjoy something so delicious?

I don't know if you've ever done ice cream at home. If your answer is "no, never" the only thing I can tell you is that you are missing something very big. They come in many flavors and they are easier to make than you might imagine.

Also, this ice cream can be made with or without refrigerator , so you have no excuses to get down to business.

The best thing about this recipe is that it is super simple, especially if you make it with a refrigerator. You only have to whip the cream, the whites and mix both preparations and ready to fry.

Mount the whites well It is the most important thing for this recipe to be perfect. For this you have to follow the same indications as always:

  • The glass and the butterfly very clean and without a trace of fat.
  • That the whites are not mixed with the yolks.
  • Use a little cream of tartar or potassium bitartrate to stabilize the whites. If you don't have on hand you can use a pinch of salt or a few drops of vinegar.
  • Beat for 1 minute by egg white at speed 3 1/2.

To butter the ice cream and make it creamier you can use the refrigerator which makes work much easier. But you already know that it is not essential because you can do it manually.

Once done, you can serve it with whatever you like the most. In this case we have accompanied it with some caramelized walnuts that give it a very rich crunchy touch. Although I am already thinking of other combinations as a red fruit coulis or a chocolate sauce.

When consuming it is important to take it out of the freezer for a few minutes, this will make it lose rigidity and become a creamy and delicious ice cream.

Can be stored in the freezer up to 3 months.
