I don't know if it's ever happened to you but for me cookie dough is always a temptation and I always end up eating a piece of the clippings. The problem is that these masses should not be eaten raw because they can contain bacteria that cause disease.

Eating any type of raw dough, be it bread, pizza, cookies or biscuits, can lead to us ending up in the hospital with an infection of salmonella or E.coli. So you better not risk it.

That is why I have looked for the best way to make cookie dough that can be eaten raw and I have discovered a whole recipe.

Millo gofio is a toasted flour that has different uses, it is similar to white flour but with a darker or yellowish tone and, in addition, it is widely consumed in the Canary Islands.

You can buy it in specialized stores and online but if you can't find it, don't worry because you can make this recipe with other flours.

You just have to preheat the wheat flour, rice, corn in the oven to 160º and toast it for about 10 minutes or until it has a nice light beige color. During this time we will have to open the oven and stir so that the flour that is on the edges does not burn us.

Once you have it ready, you remove it from the oven and let it cool completely before making the recipe.

Is it essential to toast the flour? Yes it is. Only in this way can you eliminate bacteria.

Surely you are wondering if you can bake this dough. Power, you can but, how it contains neither egg nor yeast, they will not form cookies.

But I assure you that you don't need to make cookies to enjoy this dough. Just try to make small balls, like truffles, store them in the fridge for a couple of hours and serve them with coffee… You'll see what a surprise!
