These gluten-free orange and cinnamon polvorones will undoubtedly be the Christmas sweets protagonists of this year. And it is normal that they are so successful because they are simple to make, they hardly contain sugar and they taste delicious.

It is true that the cinnamon and orange They are two ingredients that go very well together that is why they are used in many recipes like this one rice pudding or in this delicious Calatrava bread. So they are a safe bet for our sweets.

But it is also that preparing our gluten-free orange and cinnamon polvorones at home is very simple because they have a very easy to work dough and the recipe has no complications.

Ingredients

  • 120 g of almond flour
  • 80 g of coconut flour
  • 60 g of cassava starch
  • 20 g whole sugar
  • 2 level tablespoons (dessert size) ground cinnamon
  • 1 level tablespoon (dessert size) ginger
  • 2 tablespoons (brown size) baking soda
  • 1 pinch of salt
  • 1 organic orange (skin only)
  • 90 g of lard
  • 1 tablespoon (dessert size) apple cider vinegar

Preparation

  1. We put all the dry ingredients in the glass, that is, from the almond flour to the salt. We aerate during 10 seconds, speed 6.

  2. Add the lard and the orange zest and program 2 minutes, spike speed.

  3. Add the vinegar and knead again for 1 minute, spike speed.

  4. We spread a piece of cling film on the work table. We dump the dough on top and roll it into a cylinder of about 5 cm in diameter.

  5. Let it rest in the fridge for 30 minutes or until the dough is cold and has gathered body.

  6. We preheat the oven to 180º and place baking paper on an oven-safe tray.

  7. We take the cylinder out of the fridge, open it and carefully cut 1 cm thick slices that we will place on top of the tray.

    If they have been deformed a little, we can touch them slightly with our fingers so that they are circular.

  8. Once we have finished placing the polvorones on the tray, we put them in the oven and cook them, at the same temperature, for 10 minutes or until the surface begins to turn golden brown.

  9. We remove the tray from the oven and let it cool for a few minutes. Next, carefully, we transfer the polvorones to a rack and let them cool completely.

  10. To finish, we can sprinkle them on top with grated coconut, place them on a nice tray and they are ready to serve.
