Almond and orange cookies

I suggest you make some almond and orange cookies to light our ovens and start giving them a little life now that the temperatures have dropped and we are starting to get used to the cold.

Our almond and orange cookies they do not contain gluten, so we have substituted a commercial mix for wheat flour gluten-free and we have enriched it with almond flour. To make them even more tasty we have added zest and orange juice. So we have some fantastic cookies.

The truth is that these cookies They are great for a snack. They are quick to make, because of their elongated shape they are easy to grasp and also do not crumble. So, no wonder that when I take them out for coffee time… there isn't one left!

      Yes, the amount of flour is correct. You still have to take into account the size of the egg. I usually use medium eggs.

      The dough has to be somewhat liquid to be able to use it in the pastry bag but when you make the sticks it does not spread. If you see that it is very liquid, try adding a little more ground almonds until you get the right texture.
