Pineapple and passion fruit foam

With this pineapple and passion fruit foam you will have the perfect dessert for New Year's Eve dinner.

Christmas is synonymous with traditional sweets but surely, by now, your guests will prefer something lighter, smoother and refreshing.

The passion fruit provides a very fresh flavor that together with the pineapple, which helps in heavy digestions, make a perfect team for lighten dinners or large meals.

If you are organizing a buffet, you can use small cups. Do not forget to also put spoons according to the size so that your guests can enjoy this fantastic dessert.

If you would like to an even lighter version I suggest you replace the yogurt with whites whipped to the point of snow. Afterwards, mix them gently with the pineapple and passion fruit puree. It also serves in individual glasses. This way you will get a dessert with fewer calories but you will have to assemble it at the last moment because, as the hours go by, the puree separates from the whites forming layers.

A simple, soft and light dessert for New Year's Eve.

Ingredients

• 6 passion fruit
• 1 plátano
• 400 g of sweet peeled pineapple
• sugar or sweetener
• 2 Greek yogurts

Preparation

1. We cut 3 passion fruit in half and remove the pulp. We put it in the glass and add a splash of quality water. Approximately 40 grams but it will depend on the juice that the pieces themselves bring. We crush during 15 seconds, speed 5.

2. We pass the pulp through a fine mesh strainer to remove all the seeds and rinse the glass a bit so that they are not inside either.

3. We put the crushed passion fruit juice, the pineapple and the banana into pieces again in the glass. We crush during 30 seconds, speed 7 until it has turned into a smooth cream. If there is a piece of pineapple, prolong the mixture for another 15 seconds. We withdraw and reserve

4. Without washing the glass, we put the butterfly on the blades. We put the Greek yogurts in a glass and a little sugar or sweetener. But only a little since the fruit cream is also sweet. We beat during 30 seconds, speed 3.

5. With a manual whisk we mix both creams. We distribute the cream in the glasses or containers chosen.

6. We cut the rest of the passion fruit in half and decorate by placing part of the pulp and the crunchy seeds on the surface of the cream.

7. Cover with plastic wrap and reserve in the fridge until serving time.
