Do you want to prepare a easter bunny cake to celebrate Holy Week with your little ones?

In Italy, these days of Easter, supermarkets are filled with chocolates -eggs, chicks and rabbits- and a typical sweet called colomba (a bun similar to panettone but shaped like a dove). And I, a little saturated with so much chocolate and so many pigeons, I have made a sponge cake with a fun shape and according to these dates.

Keep in mind that we can "tune" any cake or cake to have this bunny butt shape that the little ones will surely like. So, choose your favorite cake, put a little imagination in it and… enjoy!

With your favorite cake you can make this original Easter bunny cake. A different way of presenting a cake for the little ones these days.

Ingredients

The necessary ingredients to make your favorite sponge cake *.
A little butter to spread the mold and flour to sprinkle it
Jam to put inside the cake
Philadelphia type cream cheese and icing sugar (we can substitute the cheese and icing sugar for White Nocilla)
Whipped cream (see recipe here)
grated coconut
Baubles to decorate
White cardboard for our rabbit's ears

Preparation

We make the dough for our sponge cake. Once ready we put it in a bowl shaped like a half sphere where we are going to bake it. The one that we put over on muffins or muffins (at least four).
The baking time will depend on the dough that we have made and also on the chosen mold. Be careful to remove it when it is done (you can help yourself with a skewer). Surely the muffins will be made before ...
We unmold the garnde sponge cake. With the muffins we prepare the legs, the tail and part of the neck where we will then prick the ears (we help ourselves with a knife to give it the desired shape). We wait for it to cool down.
We can give our large cake a horizontal cut and fill it with Strawberry jam and cream (or whatever you prefer). Even bathe each of the parts with syrup and we will practically turn it into a cake.
Now we are going to make it white. If you have opted for cream cheese and sugar, put three heaping tablespoons of cream cheese and two teaspoons of sugar in a bowl and mix with a fork (the amount is approximate, it depends on the size of your rabbit's bum). The objective is to spread this cream over the entire surface of the cake so that all the crumbs stick to it and then not show up in the cream. The white Nocilla will do the same. We will do the same with the legs, the head and the tail.
Now we are going to put the cream on each of the parts (body, heads, legs and tail).
With some toothpicks we place the tail (half a toothpick stuck in what will be the bum and the other half in the tail) and the legs. We put the rabbit's neck in front, close to the body, as if it were looking for carrots with the rest of the head buried underground. On that neck we are going to put the two ears that we will have made on cardboard.
We sprinkle the whole body of the rabbit with grated coconut and put the pink part that you see in the photo on the legs (I have done it with sweets but you can do it with fondant).
