Gluten-free vegetable cake

Preparation

1. We start by preheating the oven to 150º. We grease a mold suitable for the oven.

2. We put the cheese in the Thermomix glass. We shred it during 3 seconds, speed 4. We remove and distribute it on the bottom of the mold.

3. We wash the tomatoes and zucchini. Tomatitos cut in half. With the zucchini we make spaghetti using the special peeler. If we don't have it, we can grate it or cut it into strips.

4. Place half of the tomatoes on the cheese, reserve the rest for later. We put the zucchini strips on top.

5. We put the butterfly on the blades. Add the eggs and beat for 30 seconds, speed 3 1/2. Add the milk, cinnamon, nutmeg and season. We mix during 15 seconds, speed 3.

6. Carefully pour the cream into the mold. We distribute the rest of the tomatoes on the surface trying to make them slightly sunk between the zucchini strips.

7. We put it in the oven for 45 minutes.

8. After time we check that the cake is set. If we like the surface to be golden, we can grill it for a few minutes so that it takes color but be careful not to burn it.
