Aubergines stuffed with ham

Today I bring you a great recipe for lovers of eggplants: aubergines stuffed with stir fried y Jamon. That easy! We make a sauce, add the roasted aubergine and fill it. So as you can see it is perfect for when you are short of time (which is my case lately, it seems that we are having a hard time picking up the pace after Christmas ...).

I leave you the ingredients which I have used myself, but of course, it is a good opportunity to spend any vegetables that you see that are getting too ripe in the fridge. Also, taking advantage of the fact that I prepared the other day the polvorones sponge cake, I put the aubergines divided lengthwise in two and wrapped in silver paper also in the oven. Always remember that you put the oven or the thermomix on for a long time, if you can take advantage of that energy to cook something else at the same time on another tray in the oven or in the varoma of the thermomix.

In any case, if you have the aubergines without roasting, you can do it in the microwave covered for 10-20 minutes at maximum power (depending on the size of the aubergines) or in the varoma by programming 20 minutes, varoma temperature, left turn, spoon speed. And if you want to do it in the oven, about 40 minutes at 180º.

Also, to give them a different touch, I added peanuts Toasted (panchitos / peanuts) to give a different texture to the aubergines, a success! It will also look great if you add cashews, almonds or walnuts.

        I just made the recipe and it is very good, thank you very much, I am also on a diet and I have thought I eat Diet pizza. I scooped the stuffing out of the aubergines and then made it they were very tender.

      Hi Naiara,

      You can roast them in the oven, open in half with a few cuttings on the surface, salt and oil (180º, 45 minutes or until you see that they are tender), in the microwave also divided in half (maximum power 5-8 minutes), you will see that they are tender when pierced with a fork. Also to the varoma, cut in half 20 minutes, varoma temperature, speed 2. Thanks to you for writing us!
