Lavender cookies

Preparation

1. We start the recipe by preheating the oven to 170º with heat up and down.

2. We put the sugar and the lavender flowers in the glass, we program 15 seconds, speed 9. We let it sit for a few seconds for the powdered sugar to settle.

3. Add the butter and beat for 4 minutes, speed 4. If we see that the butter remains stuck to the glass, we will stop the machine and lower the mixture towards the blades. Then we will continue beating at the same speed.

4. Add the cream and mix for 15 seconds, speed 3.

5. We incorporate the mixture of gluten free flour and also baking powder. We mix during 10 seconds, speed 3.

6. With two dessert spoons we will take portions of dough. We make a kind of canelle and leave it on a cookie sheet suitable for the oven. We will place them separately because they expand in the oven. We repeat the operation until we finish with the dough.

7. After the time we put the tray in the middle oven height. Cook the cookies for 15 minutes at the same temperature or until the edges take a nice golden color. We remove the tray and let them cool and harden slightly. Once they are warm, they can be separated from the tray and placed on a rack to finish cooling.

8. Once cold, store in an airtight container.
